Apple Cider Pancakes

We recently went to visit an apple orchard and came home with oodles of apples. What do you do when you have that many apples? You start to look for ways to serve them in new and different ways.

My son loves pancakes in the morning. While he loves them "just plain," pancakes with special ingredients in them really make his morning. I decided that apples and apple cider would make a perfect special ingredient. My son wholeheartedly agreed. We made eight pancakes with this recipe. Three ended up on his plate for breakfast and he snacked on the rest for the next two days.

Materials List

  1. apple cider (1 cup)
  2. eggs (1)
  3. apples (1)
  4. pancake mix (1 cup)
  1. Add one egg and a cup of apple cider to a mixing bowl. I went ahead and cracked the egg for my son. (He hasn't yet mastered not getting shells in the mixture yet.) Older children can do this on their own.

  2. Then add the flour and stir the mixture until it is fully blended.

  3. Next we cut the apple into medium-sized chunks. My son uses a dull knife to cut apples.

  4. While my son got ready for school, I poured the mixture into a hot frying pan and cooked the pancakes for him. They came out thick and yummy!
