Quesadilla "Salad Bar" Style
How we did it:
- toppings - olives, avacado, cooked chicken, peppers, tomatoes, beans
Offering foods like this seem to get my children trying new things and making healthy choices.
I gave both kids a plate with a tortilla on it and let them add what they wanted to their quesadilla.
I tried to have them keep the ingredients to one side so I could fold it over in the pan.
Next, I took over and popped these guys right onto a hot pan. A minute or so on each side and they were ready to eat.
Yum!! She was pretty proud to have made lunch this day.
