Cheesy Stuffed Pasta Tubes
How we did it:
- manicotti pasta shells
- ricotta cheese (15 oz)
- egg (1)
- salt & pepper
- shredded mozzarella (1 cup)
- fresh parsley (1 tbs)
- tomato sauce
- aluminum foil
- ziplock bag
- baking dish
This recipe just takes a few ingredients, but is a meal in itself and my kids love it! You can use any kind of tomato sauce you like, or even make your own. Start by preheating the oven to 350 degrees.
Next, it was time for the kids to get involved. To make the filling, we added the entire 15 ounces of ricotta to a mixing bowl.
Along with the ricotta, put the egg, parsley, 1/4 cup of the mozzarella and a little salt and pepper into the bowl. We have a pair of children's scissors that we keep in our kitchen. It is a great safe tool for cutting fresh herbs.
Now, for my daughter's favorite part--mixing! She mixed it up with a spoon until the ingredients were well combined.
We added our mixture to a ziplock bag and snipped the corner to use like a pastry bag.
My daughter loves filling our pasta tubes. To get enough filling into them you must fill both ends of the pasta tubes. It gets a little messy, which makes it even more fun!
We placed all of our filled pasta tubes into a baking dish and covered with the tomato sauce. You want them to be completely covered with the sauce.
We topped it with the remaining mozzarella cheese and covered our dish with foil. Into the oven it goes, for 1 hour covered and 15 minutes uncovered.
The hardest part is waiting for this yummy dinner to be done cooking!
