Zucchini Muffins

My kids are extremly picky eaters. Sometimes it seems impossible to get them to eat healthy food. So I hide it whenever I can so they will eat it when they don't know it. Their favorite? Zucchini muffins with spinach in them, and a little chocolate to cover it all up.

Materials List

  1. flour (3/4 cup)
  2. sugar (1/2 cup)
  3. baking powder (1/4 teaspoon)
  4. baking soda (1/4 teaspoon)
  5. salt (1/4 teaspoon)
  6. unsweetened cocoa powder (1/4 cup)
  7. egg (1)
  8. oil (1/4 cup)
  9. zucchini (shredded) (1 cup)
  10. baby spinach (1 cup)
  11. chocolate chips (1/4 cup) - (optional)
  1. Start by gathering all the supplies you will need. Also prepare your muffin tins either by greasing them or adding muffin liners. Preheat your oven to 350 degrees.

  2. My 5 year old likes to help me shred the zucchini and spinach, however when ever working with a food processor please use caution and follow all the safety guidelines. Shred the zucchini and spinach together in a food processor.

  3. Add the cocoa powder to the vegetable mix. Then set aside.

  4. In another bowl add the egg, oil and sugar. Mix well. Let the kids help mix the ingredients. Both of my kids love to help with this part.

  5. Then add the, flour, baking powder, baking soda, and salt, mix well. Add in the vegetable mixture. Then if you would like you can add some chocolate chips. We have made them with and without and my kids like them both ways.

  6. Then fill the muffin cups 3/4 full and bake at 350 for 20-22 min or until they are golden fully cooked (they should bounce back when pressed on) Let them cool and enjoy! My kids love them for a snack or for an on the go breakfast.
