St. Patrick's Day Peppers

My kids love to get creative with their food - sometimes approved and other times not so much. Well, this healthy snack takes an ordinary green bell pepper and transforms it into a delicious St. Patrick's Day treat. Add some ranch dressing and your kids will feel like the luckiest kid in the world.
How we did it:
Materials List
- green bell peppers
- knife - If you have a children's chef knife, you can let them do the cutting.

We went to the grocery store to pick out our lovely peppers. We made sure that the peppers had three or four nicely defined sections which help make it look like a shamrock.

Then we sliced the peppers horizontally about 1/4 in thick. If you have a plastic kid's cutting knife, feel free to let your kids take part in the action. Next, we removed the seeds and the lighter middle part. Note: some of the slices will look more like shamrocks than others.

Next we took a slice of pepper that didn't look like a shamrock and cut it into 2 inch pieces to make the stems.

The kids took the two pieces and had fun making them into clovers. Once we brought out the ranch dressing, they enjoyed their lucky snacks. I was happy they were eating something healthy. Happy St. Patricks's Day!
