Turkey and Mashed Potato Bites

Last Thanksgiving, our family had more leftovers than we could eat! This year we wanted to try this handy recipe and enjoy some after-Thanksgiving munchies! The best part of this recipe is that it is super flexible -- as long as you have breadcrumbs, eggs, and some Thanksgiving leftovers, you'll be able to make it work.

Materials List

  1. mashed potatoes (3 cups)
  2. turkey (1 cup) - (finely chopped)
  3. green onions (1/3 cup ) - (chopped)
  4. shredded cheddar cheese (2/3 cup)
  5. eggs (2)
  6. breadcrumbs (2 cups)
  7. cranberry sauce - (optional)
  8. gravy - (optional)
  9. muffin tray
  10. cooking spray
  11. spoon
  1. Preheat your oven to 350 degrees fahrenheit. In a large bowl, mix together the mashed potatoes, turkey, green onions, cheese and eggs until well combined.

  2. Stir the ingredients until they are mixed evenly.

  3. Spray the muffin tray with cooking spray, and sprinkle breadcrumbs in each cup to evenly coat each base. Make sure to cover any spots that don't have any breadcrumbs!

  4. With a spoon, scoop out the batter and fill up each cup to the rim.  

  5. Sprinkle a generous portion of breadcrumbs over the batter with an even coating.

  6. Bake the bites at 350 degrees fahrenheit for 20-30 minutes, or until the breadcrumbs look toasted. Decorate these Thanksgiving munchies with other leftover ingredients! We used cheese and green onions to make our turkeys.
