Step 1
We look forward to making this cookie all year long! It's that good. I could hardly keep the little hands off the chocolate chips to take this photo. The excitement has started!

Step 2
My daughter added all of the chocolate chips to a bowl and poured the cream over the top. Next, I melted the chips in the microwave. When doing this, be careful to stop every 15 seconds and stir; it takes about a minute, but you can easily overheat the chocolate chips so that the mixture becomes too thick. You want the chocolate to be shiny and thin. You could also melt these in a double boiler if you choose too.
Step 3
We added the peppermint extract and got to dipping our crackers. One by one, the chocolate-dipped crackers were placed onto wax paper.
Step 4
We topped them with a little bit of crushed candy cane for a festive holiday look.
Step 5
Once the chocolate was gone, we popped the sheet of cookies into the freezer until the chocolate was hard.
Final result!
They came right off the wax paper...and were gobbled down quicker than you can sing "Jingle Bells"! If you have any left, they can be stored in an airtight container in the refrigerator or in a cool place.
